replacing a thermostat

My existing therm (probably original, with 190k on it) is stuck open. Truck doesn't heat up anywhere near a decent operating temp, and I'm getting pretty ****** mileage, down to about 12mpg from the 14.5 I was getting before the thermostat died.

Simple question. The stock therm is a 195 degree unit, I know the older 350's had a 180 degree as an option, with a 160 degree as a higher-performance option. What's best?

160 is too cool for even me in the AZ summer ... I run a 180 year round.
