So when they push that cylinder in are they able to reach in that hole and toggle the lock? Is that how they do it? So a plate holding the lock in place prevents them from getting in the hole? I haven't taken the door apart yet to look inside to see how they did it.

I think the plate prevents the lock mechanism from being actuated.

This is why I deleted my keyholes on the front passenger door and the drivers door. I swapped the door handles with rear door handles, and removed the lock cylinder and lock rod. The only drawback is that I'm SOL if my battery goes dead. And that actually DID happen to me. Had to use a door unlock tool to reach in through the window area to unlock the door. This is the tool I have, it works great on GM vehicles with the interior lock switches that slide sideways. The ones that pull up, it's doesn't work on that style. Can't use it on my wife's Chevy Traverse.

the lock cylinder is just clipped into a plastic holder (on the backside of the door handle), so when they "pop" the lock cylinder it breaks the plastic holder and then they just turn it and unlock the door just like it would with a key, because the lock is attached to the rod. fixing it requires a new door handle.
another thing they do is break a rear window and climb in, never opening a door and therefore never triggering the factory alarm.
they can do this in a parking lot by pulling in very close and doing it from the other vehicle and nobody can even see it happening unless they are looking close.
