On the newer Tahoes it's fuse #9 under the hood - not sure about your year or what you pulled but be careful. Check out Youtube, there is a bunch of Stabilitrak stuff on there. Member Swathdiver on here probably knows more about this than I do - he's a wealth of information on these trucks.
You are lucky! ~ I am personally not a fan of these electronic driving nanny systems. They are designed for people who can not counter-steer in a slide.

I would get the stability control system repaired ASAP it's probably the source of most of the problems your having - it's tied into the brake system as well as the engine.
