So my 04 Tahoe just hit the dreaded 100,000 mile mark. What, if any, necessary maintenance should I do it?

What maintenance have you previously performed, if any, and when?
There are plenty of things to look at:
air filter, fuel filter, spark plugs, trans filter, diff fluid, brake fluid, belts. If you've done the regular maintenance, I'd say at least grease your chassis/suspension components, change brake fluid (brake fluid absorbs moisture and degrades over time), diff fluid change, check and clean your tb, coolant, and change plugs if you havent already. Also check for any play in the front hub bearings and loose/worn steering parts. At particular high mileage points (100k, 130k, etc), it's a good idea to go over and check everything.

Good call JK!

Mine just hit 90K, and all I can add to this ^^ would be water pump and belts (if you haven't done 'em already.
