wife owns a bakery, delivers cakes in it all the time, she likes it because she can run the rear AC & keep them cold.

we have a 2013 Tahoe, and the rear is perfectly flat, but with the 3rd row, there isn't much space, and of course, she doesn't have the strength to take out the 3rd row.

was thinking a 2016 Suburban with the year end deals, but the unlevel floor kinda kills it.

I took out my storage bin in the cargo area and it is flat under there(2015 Yukon XL SLE). You will need to lay a carpet since there are two holes to screw the bin in to. I bought a floor mat from The hardware store and never looked back. Of course, not sure how much space your wife needs. I assume the cargo area of the Suburban or Yukon XL should suffice.

I took out storage box and 3rd. row seat for my dogs and the floor is reasonably flat{anchor points } a thick mat would sort it out .Not as nice and flat as older Tahoe, Burbs though.
