Seems to happen mostly when going uphill at highway speeds. Also, when using the control to increase or decrease speed, there is an odd clicking sound coming from under the dash.

Any advice on where to start looking?

The control module/servo mounted under the hood may have bad solder joints or bad servo. It is all located in one housing just follow the cable back to the firewall on left side of vehicle. The circuit board can be repaired or replaced but if it is the servo the whole module has to go. A whole remaned unit is rather expensive from a part store too.
