Does anyone have any products/ideas as to how to reduce the amount of dust built up on the interior dash. Seems as though as soon as you treat it the dust sticks right to it.

I was thinknig maybe spray a rag with static spray and then wipe it? Any ideas?

I am not 100% sure about what to use to keep it from getting dusty, but a decent microfiber cloth will take the dust off in a second. Don't use Armor All or the likes on it, as that will attract lots of dust.
This stuff claims to help with the dust, but I haven't tried it: http://www.detailersdomain.com/sonaxdashboardcleaner.aspx
I do use this as a regular cleaner: http://www.detailersdomain.com/1zeinszett-cockpitpremium.aspx
and this when things get really dirty: http://www.detailersdomain.com/1zeinszett-plasticvinylcleanerplastik-reiniger.aspx
I can't say how good those are at keeping the dust away. I'm a bit surprised that these (at least mine) doesn't have a cabin air filter (or, if it does, it isn't very good). My last SUV hardly ever had a spec of dust on the inside.

Keep a micrfiber cloth in your consol and wipe it down real quick from time to time. The more you keep on top of that stuff, the less you have to do in the long run.

I just wipe it down with damp Viva paper towel while I am cleaning the glass. Then I wipe it down with meguiar's Quick Interior detailer.

Not only is it sodding dusty as Hades out here, the UV is terrible. Better to wipe off dust than have a bleached or brittle dashtop.

I use No Touch tire care on all the interior plastic.

Doesn't attract dust.
