At idle for more than 5 minutes just having driven for 30 minutes, I stuck a meat thermometer into the vents and I am getting 58F to 60F... Is that good or bad or normal??

Wow, you are going to have to provide a lot more details that that. like year, rear air option or not, outside temp and humidity, system pressures etc.

At a bare minimum, in gear or not, outside temp and humidity, blower speed setting and recirculate (max) or not.

Outside temp was 95F with relatively low humidity around 65% with a heat index of 101 and the truck was in idle 700rpm with the gear in park with max A/C recirc ON with rear A/C wide open for about 10 minutes after having driven for 30 minutes in the same settings.. 1999 Yukon 4dr SLT 203k on the engine..

With badass electric fan setup you could see up to 10 degrees colder.

Don't have away to test pressure but I was getting 58-60 degrees from the center vent but the meat thermometer is 5" long so it was down in the duct work..
