05 Yukon, looking for some nice projector headlights but nothing obnoxiously complicated, don’t need halo eyes or none of that crap, just simple projector headlights, and suggestions?

Most guys will retrofit them with a better projector. There are a few threads and a site and a member that sell the necessary brackets to make the other projector work. https://www.lightwerkz.net/index.php/components/retrofit-brackets/gmc-denali-mini-h1-bracket.html

Can get the oem lights from any gm dealer

Heres that same bracket a few bucks cheaper. There are several sellers that make that, but CBD was the only one I could find with a cheaper price, (for GMC and Chevy). Not sure after shipping charges though.

As stated, OEM Denali headlights would be easiest and best quality-wise. Most cheaper aftermarket projector assemblies, even the aftermarket Denali copies, have projectors with subpar light focusing. The OEM projectors at least have been engineered to meet specific guidelines for focus and brightness. Also, as stated, the OEMs can be improved with quality aftermarket projector retrofits if you're not satisfied with their output. If you're gonna do a retrofit, you could get some of the higher quality aftermarket housings to save a few bucks over OEM housings.

You can do Anzo U-Bar headlights and retrofit them using the same brackets as the OEM Denali headlights. I just did them on my 02 Yukon Denali and used Morimoto Mini H1 projectors. They came out awesome and give an updated look as well as super bright light.
