What's the newest year seats I can direct install in my 05' Tahoe ?

I wanted to put the NNBS seats in mine and it looked like the bolt holes would line up but someone brought to my attention that the nnbs seats do not have the seat belts in them like the nbs seats do.

Yeah due to the seat belts being part of the front seats, only NBS seats will work in NBS trucks. So 2000-2006 is pretty much all you can choose from

If this is a dumb question forgive me, but why couldn't you mount a seat belt from the nnbs in the b pillar and just click it to your existing seatbelt connection?
