What is the best temp degree thermostat to get? I am looking online and there are 195, 180 and 160?

With a mostly stock motor and PCM I would stick with the oem 195, especially in colder climates.
I have some mods and a tune, plus I live in a hot climate. I also tow a ~6000 lb boat and I went with a 180 so there would be less pining under heavy load and high ambient heat. Plus it helps keep the oil and trans fluid cooler in my case since they both run through the rad.

180 in the warm months is OK, if you live in a cold climate 180 may not be warm enough in the winter. 180 here in AZ is ok in the winter for me.
