Most trucks operate around 200-210. If it was running at 180 with a stock thermostat (195 degree), I'd be suspect of the thermostat.

That said, my '99 Yukon is running about 180. I just had the intake gaskets replaced, but I do believe I have another coolant leak (possible flow control valve on RH side).

Is it definitely full of coolant? When you went to replace the thermostat was the coolant full in the intake on the bottom side of the tstat?

Also for future reference throw those rubber gaskets away! Use silicone on the ends but the trick is to let the truck sit overnight before you run it so the silicone has time to cure before it comes in contact with the hot oil.
