I must have missed the memo on how to remove these seat backs without breaking them because in the process of putting my leather on my seats I've broken both. Is there anyway to fix them other than replacing?

I did the same when installing headrest monitors and attempted all sorts of ways to latch them with broken tabs with no luck. I tried industrial type velcro and after a few months I gave up and ordered two new ones. I still have the orig with broken tabs.

Yep order new ones. Get the part number and Google search and also look on Ebay. Usually free shipping and no tax plus a hell of a lot cheaper than your local Dealer.
