Reach into the glovebox and pull the OBDII adapter out and plug it into the port, fire up your Torque Pro app on your phone and have a look around...
Fuel Pressure, LTFTs...

could be many things maf, transmission, fuel injection, sensor, really hard to say until you get a code
check for a history code if the check engine light came on and went out you might have missed it but it should be stored.

Back in 2018 my son's 2011 scion did the same thing, no codes and the car would not go past 2k rpms. I changed out the coils and that fixed the issue. I don't think a 2019 vehicle would do that with out throwing a code.
