For the "wheels" going to be a bigger rim won't effect your speedometer as long as the tires on the new rims are the same size. If you go bigger or smaller with the tires then you're speedo will be off.

Is the 3rd picture with the "new lower shank"? If it is the camper looks a little nose high. It could just be the angle of the picture, but if it is nose high that will also induce sway.
Never go by dry weight or the manufacturers listed tongue weight. The real dry weight (only way to know for sure is to take it to a scale) is probably really close to your 8100 lbs.

Did you do the last oil change or at least check to make sure whoever did it filled it up to the full mark? If not it's hard to tell how much it actually used.
The mobil 0w20 could possibly be a "heavier" 20 weight. A guy would have to lookup the specs of it compared to the ac delco. Just like the ac delco could be on the thinner side of a 20 weight. I'm not saying they are but it's a possibility.
Just remember not many people come on forums and check in daily or weekly and say their "insert vehicle here" is problem free. Most come on with problems and looking for advice.
