To my knowledge all of the 21+ have the electric parking brake, the black box on the back of the rear calipers. Like you mentioned I too wonder if unplugging would have an impact on your issue, but you would obviously lose the parking brake function entirely.
The Ford guys are constantly whining about their 10 speeds. It’s all in the programming.
Not sure I’ve seen the first complaint about the 10 speed in a GM, very minimal if any.
This is getting a little out there. OP is not driving a Miata on the autocross track, he is cruising down the highway with his family in a 5,500 pound SUV with over 400 horsepower. The additional weight is completely irrelevant to the problems that the OP is having.

It’s the PPV pad material, backing, etc. Live with it, try to have the dealer spray the pads with CRC Disc Brake Quiet, or swap out for a different set of pads.
The limitation is payload on these 1/2 tons you almost always hit payload before anything else.

You can use 1/4” slip on spacers or 1.25” spacers with OEM or similar rims with pockets in the mounting face OR trim your studs OR go 1.5” and run any wheel no cutting. BORA is the preferred brand for bolt on. Slip on anything will do.
Open it up and see what’s going on first. Often the aftermarket replacements are ever so slightly different from OEM and typically a few OEM things have to be re-used.
4” and up needs an actual kit.

Without the cats you’re probably running too lean and misfiring during that specific condition. Check misfire data, fuel trims, etc
