Hi, I have decided to use my tahoe in the desert where I go with my kids during week ends.
I believe the tahoe needs a small lift because it is very keen at sinking into the sand, despite lowering the tires pressure to 18 psi. I have the stock 20 inches tires.
Considering that during the week I use the car to go to work, about 200 km daily, what will be the optimum lift, and where, front and back or front only

I'm probably wrong but what will a lift do to keep you from sinking into the sand? Nothing will change except you'll have more clearance from the top of your tire to the wheel well.

I think your best option would be to go to a smaller rim/wheel (maybe an 18 off of a Z71) and then drop the pressure in the tires.

Yes smaller wheel, wider tires, and more appropriate tread pattern (all terrain at least). Not sure what tires you are running now.

you need height to pass through the high dunes in the desert, otherwise you will sit on the bottom of your truck if you try straight to the edge with no inertia.

i am actually in the same situation here and i am planning to go for 2.5" front and 1.5" rear on my LTZ with OEM 20" and then go for wheels 275/60r20 or 305/55r20 depends on the rubbing which i do not want to do at all

Good evening, apologies for my "radio silence".
You are absolutely correct, all of you.

Smaller dia. tires is the trick.

However I have been lucky enough to seal a deal for a second hand Silverado Extended cab 2006. With a little more efforts than buying a set of smaller reims and tires I manage to give a kiss of life to a poorly maintained vehicle.
I'm using 17" tire, deflated to 18 psi before hitting the desert and it just make the truck flying on it. Also I don't need to tow the trailer I was using with the Tahoe to carry the camping gears, the box behind is more than enough.
At the same time I'm giving myself and the Tahoe less stress and longer life :)
