Everything in the interior of my 2023 Denali lights up, but the multifunction switch for the wipers etc. Should that switch lever be lit at night?

No.

I'm guessing that since it's mostly blocked from view when driving, GM didn't see much point in lighting it.

I was looking for a glove box light in our 2022. Sorry, not included! There is one in the center console.
