After 4.5 months, I re-installed the stock wheels and tires yesterday. Careful inspection of the wheel liners revealed the tires only rubbed enough to leave a mark in one location, passengers side on the plastic trim above the running board. I also recall exactly when this occurred, turning into a driveway that I almost missed, on the brakes and through a dip.

Fuel economy went from 18.42mpg to 16.24mpg, excluding towing but ignoring colder weather, larger tire diameter (3-4%), differences in gas, increased idle (warm-up) time and resistance from snow/slush and 4wd use. I would guess the real fuel economy penalty would be around 1mpg in a carefully controlled experiment.
