Light came on switched to transmission temp display, seemed to go from 143 - 156 max. Let cool, checked coolant and was above min but below max. Heating and AC proper. Started it up and took it around the block for a few laps and then let sit idle (giving it a little gas here and there) and seemed to normalize at 153. No CEL or any data on GMc app. Drives/idles as expected. Anything else to check and/or keep an eye on?

Are you talking about engine temp or tranny temp? Engine uses coolant; tranny uses tranny fluid.
Figured the tranny temp would be an indicator of the engine temp. Shouldnt a CEL been thrown for a engine temp light coming on?

Went out for a bit this morning and no temp light.
on the k2's the temp sensor has been a known issue, it goes whacky and causes the fans to run high speed and/or AC to be cut-off, being it is cooler weather you might not have the same things happen. I would keep an eye on it and see if you notice anything out of the ordinary.

Motor oil is almost always hotter than coolant, which is almost always hotter than ATF.
If ATF is 221F, bet yo @$$ coolant is hotter than 239F, and motor oil is over 257F.
This is why I don't want my coolant over 221F if ever at all possible.
Shouldn't a CEL been thrown for a engine temp light coming on?
Only 'vettes have engine temp senSORs which work with the ecm.
Other vehicles only get engine temp senDERs; as @Doubeleive said, just a dummy light.
