I just got myself a 2003 Tahoe and just replaced the alternator (new 105 amp) and a brand new battery but I’m still having issues with the battery not charging both test fine besides the battery being obviously low and the battery cables look fine nothings tore up and there’s no corrosion what else might be causing the battery to not charge?

Even though the voltage regulator is usually part of the alternator in modern cars, if it's not working right, it won't manage the battery's charging voltage correctly. You can check this by testing the voltage at the battery terminals while the engine is running; it should be between 13.8 and 14.2 volts. Also, make sure to check the drive belt that connects the alternator to the engine. If the belt is loose, worn out, or slipping, the alternator won't charge the battery properly.
