I have a set of shorty headers I need to paint before I install them next week, and am wondering what would be best to coat them with? I'm not looking to be flashy at all, just want to protect them (they're raw stainless now) and help keep under hood temps down.

ceramic them and just leave them. the appearance you will any way. it is not supposed to look fancy. ceramic is supposed to be functional.

Just curious as to why you went with a short header?

Long tubes on a 4wd require massive amounts of exhaust modification, if they'll even fit, because the driver side tube usually dumps right in front of the transfer case. As in inches away from it.

Soo... what ceramic paint should I use? That's my question.

see a professional shop and ask them for the best thermal barrier ceramic coating they have. sometimes, like the shop near me. the black satin ceramic coating or real nice chrome polish one was less effective then the dull silverish one i have in terms of heat protection.
