Does anyone know how to go about wiring up the extra + and - buttons to do something else? I thought it would be cool to use them for a light bar switch if possible.

They aren't really for an on/off because they are a momentary switch and you would have to hold down the button to stay on. I've seen people use them for air ride

Oh I see, that's too bad... I really thought I was onto something here! But still I really like the idea of using it for SOMETHING. Do you know how to wire it up for something basic?

Flash your high beams or fog lights maybe? It could honk train horns as well...
