We have had a few taken off our trucks, but oddly only the RAM's and the F150's. So far the Sierra/Silverado haven't had any taken from them. We started out using the FSPE cat guards. The issue we had with those is they don't allow much air flow around them, basically you are putting the kitty in a box with a couple of vents. We had some overheat and trip the sensor when they were driven in the desert and the temps were 110 and higher. We have since gone to CatStrap, and while we have had some exhaust pipes cut, they were not able to get it out and take it. We still had to have the exhaust repaired. There are few others out there, but I haven't used any of them.

The 3.0l Duramax (LM2) has the DPF and SCR in the engine compartment which makes it harder to cut out. The Ram and Ford 3.0l diesels are under the truck like the 250/2500 and 350/3500 trucks. The LZ0 (only in the Silverado/Sierra) is slightly different than the LM2.

Correct - the SCRF (GM's term for the combined SCR and DPF assembly) is located in the engine compartment. However there is still a catalytic converter on these rigs and it's down by the frame rail. Item 6 in the diagram below.
