Engine/Radiator Fan Issue

Bought a 2017 Tahoe Premier about 3 weeks ago. It has the 5.3L with the 3.42 axle ratio and max tow package.

I took the family on a mountain drive a couple days ago, we ascended up to a mountain pass at 11,600 ft. When we reached the top of the mountain pass we decided to get out, when I killed the engine and hopped out I noticed a loud fan continuing to run from the engine bay, I hopped back in and started it up again, check the gauges and everything seemed normal, no warning lights on either. I killed the engine again and still the fan continued to stay running. I got my kids out of the back and we walked about 50 yards away to check out the scenery, after about 5 minutes the fan turned off. This is the only time this has happened and it hasn’t happened since. I’ve never owned a Tahoe before, I did however own a 2016 Silverado with the 5.3 a few years ago and never noticed anything like this. My first thought was maybe ascending up the mountain pass it got a little hot and the fan is designed to keep running until cool, but I’m just guessing. Anybody have any thoughts on this?

Engine Fan If the vehicle has electric cooling fans, the fans may be heard spinning at low speed during most everyday driving. The fans may turn off if no cooling is required. Under heavy vehicle loading, trailer towing, high outside temperatures, or operation of the air conditioning system, the fans may change to high speed and an increase in fan noise may be heard. This is normal and indicates that the cooling system is functioning properly. The fans will change to low speed when additional cooling is no longer required. The electric engine cooling fans may run after the engine has been turned. off. This is normal and no service is required.

Thank you very much! I read the owners manual pretty thoroughly but I must have missed that portion.
