Did GM switch from the 350 to the 327 in 99.5 when they did the body change?

There was a 4.8 and 5.3 option available when they did the body change. But technically the 5.3 was replacing the 5.7 small block.

the 327 ci L-76 motor was offered only in a few cars in the 60s i believe the impala chevelle camaro and corvette and a i think a few more cars
the blocks available in trucks and suburbans and tahoes etc in the 90s were the 305 the 350 and the 454 and there was a 6.5 liter diesel wich was replaced by the duramax then those were replaced by the 292 ci 4.8 and 323 ci 5.3 and they came out with a 6.0 liter there was an 8.1 liter big block but im not sure what happened to that then the last car to have the 350 CI motor even though it was an LS1 was the 03 corvette
