I watched the video linked in this thread, and he only discusses through 2018. Is the thermostat mod recommended for a 2019 also?
Yes. Some of the older models use a different quick-disconnect fitting, but I believe if you buy the new thermostat, you can simply swap out the internals and use your old existing thermostat housing (this doesn't apply to you with a 2019 model but may apply to those with 2015-2016 models.)

If there is a TSB for this issue through 2020, do you think dealerships would preemptively replace the thermostat on a 2019 under warranty?

No idea, I'm not sure what the criteria would be. I thought they were only installing this revised thermostat if a transmission was being replaced under a warranty claim.
