If your power steering fluid level was low then you'd hear the pump itself screaming before any hissing. Background noise seems pretty quiet. Is the truck running? You may just be bleeding out the accumulator.

I'll check the power steering fluid just in case. The car is off in the video. Newbie/Lazy question....where/how do I check the power steering fluid?

Drivers side, look for a cap below the alternator.

With the vehicle off, you're bleeding the air pressure from hydraboost's accumulator.

In that case, it's the accumulator as Jason mentioned. It's that canister on the upper left side of the booster. It holds some pressure so you can maintain braking assistance (boost) even if the engine isn't running. More simply, it lets you have brakes so you can stop the vehicle should the engine die on you. You'll get a few good pumps of assisted brake pressure before the pedal becomes hard to press, but hopefully you'll have the truck stopped by then.
