Check out where my truck runs when its warmed up. It seems like it should be higher than that...

It depends on your setup. I run a 180 thermostat, massive fully welded AL radiator, high volume pump, electric fans and a custom shroud, mine sits exactly where yours sits when warm. If I get on it going up a hill it will raise a lil and if I sit in traffic for an extended amt of time (or siting at the drive thru ATM) it will hit 210 and the fans will kick on.

It runs about one stick over the 1/4 mark normally. It wasnt fully warmed up but it never really gets any higher than this.

Mine seems to want to stay right around where yours it at, it might go one tick mark over but then it goes back down when I am driving around all day.
