Largest 17" tires without a Life

Hi everyone,
I thought I was going to sell my Yukon but decided to keep it after I purchased a new Sierra. I would like to convert the Yukon to my "off-road" or play rig. No, I will nto be doing rock crawling and such, just looking to change things up. Think rough forest service/BLM roads to trailheads, hunting as far back in as I can get, etc.
My 2008 SLT has about 145,000 miles (original owner). Two years ago installed Bilstein 5100's and Moog control arms. The front is on the 3rd setting so it is almost leveled, however, I do not have any lift and do not plan on installing (unless I can justify to myself). I have the stock 17" rims.

I need to take the winter tires off and install new summer tires. What are the largest tire I can install? I know nothing about vehicles in reality so fee free to explain like you are talking to a 3rd grader!!!

Am I stuck with the 265/70/17? Thank you

I have 275 60 R20 Goodyear Wranglers on 20" sierra rims. Stock suspension. There is light rubbing while backing up on a hard turn. I think the rubbing is mostly my mudflaps. I could take them off but I like the extra protection.

I run 305/50x20 tires on my 07 Yukon XL Denali with no rubbing. See if you can find a 17" tire equivalent in the type of tread that you prefer.
