Ive seen people do their ac vents so they glow at night
Maybe cubby holes or cup holders
Figure out and way to do the door handles as a courtesy light

Under seat lighting (all seats)
Roof A/c Vents mood lighting
dash a/c - as mentioned
Door pocket lighting (bottom of door)
