Is it necessary to add load resistors to the license plate and reverse lights when switching to LEDs? I know you need them for the tail lights and maybe the front turn signals due to the fast blink issue. But I am wondering about the others. Thanks.

depends on what type of LED set up you're doing. If your just manufacturing somesorta LED layoutj on your own, you'll need to figure out the resistance required so you dont blow the LED's and fuses. You can google that and there are a few websites that will tell you what you need. But if your buying a kit, most of those already come with resistors installed.

no

you do not need resistors.

LEDs will light as long as they are 12v or close. (assuming you have 12v leds) the only reason for resistors, like you pointed out, is to trick the truck into thinking you have working bulbs in the turn lights.

What about dimming lights like the interior dome lamps? Will leds dim down as the light turns off? Or is it straight on/off?

Nope, they will still dim. You only need resistors on turn signals and DRLs

DRLs too? Didn't know that. Thanks for the tip. Out of curiosity, why the DRLs? They aren't a flashing lamp. Unless they do when you hit the remote to lock/unlock the doors?

It has something to do with alternating current or somethign like that. I have not personally done it, but I remember Modded talking about it. So that is second hand information.
