Tahoe is not going to be more reliable than an Escalade, to begin with. They are all the same vehicle, with different add-ons. You can look at my signature to see my experience with them.
That said, decide what features you can't live without (for example, a 6.0 liter vs a 5.3 liter engine). If you don't care about features, go for the one with the least mileage. Make sure you check things like oil leaks, water dripping out of the water pump weep hole, make sure the heat works and isn't dripping at the t-joint on the firewall, make sure all the power windows and door locks work. If it has heated seats, make sure they work. And make sure the AC works. This is the best time of year to sell a vehicle without working AC.
I don't make these suggestions to tell you to walk away. If it is stuff you are uncomfortable fixing/don't want to pay to fix, then do walk away. Otherwise, use them as bargaining chips to bring the price down. I still have to replace a blend door on my Cadillac ESV, and that fact saved me about $500 on the sale price.
