I bought a 2016 Yukon and the dealer recommends a package of protestants for the paint, leather and rust proofing. Has anyone bought this from a GMC dealer ?

I believe you are a victim of "Spell Check" . Protestants be , Presbyterians, Methodists, and the like. But if the dealer throws in a bunch to keep your ride clean and rust free, go for it.............

They're going to charge you a fortune for scotchguard, armorall, a sealant/coating, and spray on parafin/oil.

A local detailer can do a wax or sealant, or a coating like cquartz for less and probably give you a better product, or you could DIY easily.
Leather protectant is a scam. Buy some interior detailing products and keep up on it yourself. Chemical guys, adams, even armorall.
A parts dealer/aftermarket shop will charge you less, have a better selection, give you options, and still warranty their work for the undercoating. Most places that install lift kits or spray bed liners offer some type of undercoating, my local truck/offroad/line-x shop offers like 4 different types of undercoating.
