Talked to a guy that used to work for PTAP (known for customizing vehicles) and he recommended Colorbond LVP. Said as long as your don't use a solvent to clean surfaces while prepping that it works very well. Also told me it can be used to repaint leather seats. I've been looking around online and it looks to be popular for refinishing seats. Might try it to see what happens.
