Quick Sub Question

You absolutely could tap a speaker lead or the existing subwoofer leads and run a LOC but you will only be amplifying the existing signal.
If your trying to get any kind of upgrade, imo, just go aftermarket for everything. 5 channel amps can be had for a few hundred bucks and you'll thank yourself in the end. Picking up a decent head unit and dash kit wont exactly break the bank either. The options are there, it's just what do YOU want to accomplish. Every Tahoe/Yukon I've owned gets revamped almost immediately because I cannot stand turning up the tunes and losing all the low end in my music, even without subs.

I totally get where you are coming from, and to be honest, this is the first vehicle that Ive owned that I havent done a complete new system in. But right now I don't have the dough to put into it, and I have all the parts to add the sub in my garage from my last truck. Im just trying to get the best bang for no bucks.... LOL. Thats why I want to grab the signal between the head unit and amp, so that the amp doesn't kill the bass when its turned up.

I tapped in to the wire between the factory head unit and bose amp. Ran it to a LOC and then to my aftermarket amp. Seems to work fine. I don't know all of the specs like I probably should but I got the result I wanted. I'm using a small shallow sub in a factory 00-02 box, probably not as big as what you have in the garage, but I wanted all of mine hidden and factory looking.
