4.8 2007 tahoe cant seem to find the right temp for thermostat
does it matter?

yes it does i believe the stock thermostat is 187 dagrees you dont wanna deviate from that temp either l

It's actually 180 degrees

working great but i drive 800- 1000 miles a week and I see broke down cars all the time from leaky old water hoses to bad water pumps i dont want to brake down on the highway driving
120 thousand miles now think preventive maintenance

Get the right thermostat from a dealer or Rock Auto. AC Delco's OEM temp is what I use. Had too many problems with other brands.
