I had the same dilemma and needed a Tahoe with a Bench seat in the 2nd row, but wanted the LTZ/Premier trim. The bench seats DID exist in the Premier/LTZ, but someone had to have ordered them that way from the factory as an option. I ended up with a new 2017 Tahoe LT with Signature Package. On Paper, its an "LT2" which is pretty damn similar to an LTZ/Premier but without Cooled Seats, Magnetic Ride Suspension and HID Headlights but has the bench seat standard. I upgraded to full LED headlights which are better than the HIDs in my opinion anyways
