In Florida there are three variations that are protected. We have a weird looking one in our canals, really long claws, but have not seen these down south here before, probably because I never looked or paid attention!
As for the Egrets, there was a veritable feast going on then! See them out there in the distance? We stopped to shoot this photo where moments before 3 bobwhite quail were running around. About a hundred yards to the left of this photo is where the crawfish encounter happened. Busy place!

Kind of hard to tell, but it's quite possible those are egrets or herons. That's interesting about Florida crawfish. I really don't think we have the endangered ones here. If so, our pups are going to be in a whole lot of trouble!!
We've lived here in a semi-rural part of southeast Texas for about 20 years. One fall afternoon, we had a covey of about a dozen quail show up in our back yard. We've never seen them since.
