Many years ago I took an automotive restoration class for a week so take this with a grain of salt. Once you apply the paint to the interior panel it will remove the texture and become flat. You will need to retexture the spots you paint. I recall seeing some interior paint kits that come with a dozen texture swatches. I’m sure YouTube can help with this type of repair.
I’ve repainted 3 dashes, one was a color change from light to black. Even with 3-4 light coats I can’t tell any difference in grain. You just have to spray each coat lightly.

Scotchbrite pads are great when used with something like denatured alcohol to clean and scuff the surface. Then a good plastic primer and then a paint meant for plastic - something like SEM Classic Coat or Krylon Fusion- works for me. There are SEM colors that match most GM interiors, you might have to try a few because they don’t have cross references to the GM colors. Those dashes are around $700 to your door right now. The choices are live with it, paint it, or pay up the nose. The second 2 options require removing the dash which does take quite a bit of work.
