Well, the GMC is professional grade! If those were in my stable, I would hook them both up to GDS2 software and make a comparison between engine readings.

In theory, the 3.42 should be peppier, but in reality every truck is different. Drive 2 identical trucks, and 1 will be faster. I have not found the 3.08 to be slow with stock tire size either - it has adapted to my style. Which do you drive more?

are both 4x4 or 4x2 or a mix?

I had a 2015 Tahoe 4x2. I now have a 2017 Suburban 4x4

they should be 100% identical. But they weren't even close. The Suburban was so much peppier and fun to drive. The only thing I can attribute that to is the 4x4. I know in Fords that they remap the throttle for 4x4 action. And after playing with the 'Burb, I've seen it happen. I can't find any literature on this. But the butt dyno shows a complete change in throttle maps and driveability.

also, who drives which vehicle? you primarily for both? or 1 for you, 1 for the wife? remember these have adaptive transmissions. So they literally learn how you drive and shift accordingly. 1 vehicle could be adapted to your wife driving, and when you drive it's confused and not responding as you expect...based on it's learned profiles

Are the exhaust systems both stock? Does either vehicle have any mods?

Yes Sir
Tahoe has the towing package and the 3.42 axle.

Would that explain the "lazy" throttle response?

I've rented several (6-7) of these in tahoe/yukon platform. Standard and XL. Everyone of them have been different. Some shifted flawlessly and ran like a top. Others were clunky and I really disliked the way the drove. It seems its just the luck of the draw. I'm not sure that anything was "wrong" with any of them, I just think some trucks are better than others, depending on lots of factors.

I completely agree, they are all different and one needs to thoroughly test drive each. Styling also plays a role in preference and there’s a few more options in similar trim Yukon vs. Tahoe.

Cleaning the MAF never hurts. Especially if the previous owner used an oiled air filter like a K&N or something. A contaminated MAF sensor can make an automobile perform like crap.

They specifically sell CRC MAF cleaner just about anywhere. It will not leave a residue behind when it dries unlike brake cleaner or or carb cleaner.

Currently, I drive both about the same amount. I've owned the Tahoe since Mar 2018 and I just purchased the Tahoe in Feb of this year.
