A/C compressor constantly cycling

If the compressor is cycling with the control head in the "A/C off" position, you have other issues, not just low freon level.

From what I understand, the compressor cycles when the mode is set to either of the defrost settings in order to remove moisture from the air, at least with the computer controlled system I have in the Denali. I'm not sure about the other systems; they may be different.

Absolutely correct but if the compressor is cycling in the other modes outside of defrost and a/c, there is an issue there.

It's not so it looks like it's just low on Freon.

Low of freon isn't an issue, it is a symptom.
