Well, now that you've done that, you will be that much quicker in doing the intake gaskets. If you are already noticing choco milk, I would get to it. That water in the oil will wreck the bearings quickly.

Any idea why there would be thick black buildup inside the the front of the intake mani?

The two injectors, front of engine drivers side, cylinder 1 and 3 if I recall, there was about a 1/4 thick muck buildup there. Mostly over the entire front of the intake mani. Had to scrape it out with a screw driver.

I will get the oil and coolant changed and monitor them to see if I really have a problem.

This truck is in the rust belt, and has made about 100 trips up to VT for skiing, in which it is basically turns into a white tahoe from the salt. I seriously doubt I'll get another 25k out of it. Not sure I want to do intake mani.

FYI, had a problem 2 years ago on way home from VT, put truck in storage for 6 months without washing it since it rained on the way home. Serious bone head move on my part. Just a reminder for anybody else that gets exposed to salt. Wash your car, because in 6 months mine went from surface rust to looking like it had been sitting in a junkyard for 10 years.

The EGR system is what causes the black buildup. Burned exhaust gases are reintroduced into the front of the intake and leads to carbon buildup. Carbon and leaked fuel makes a nice black sludge.
