Gauges in the dash

I have a 2005 Tahoe 5.3 with 163k miles.
I got it about a week ago, and when I accelerate the oil gauge starts to go up. Wondering if anyone else has this issue.

Also, when I'm parked on a hill, my gas meter moves quite a bit, my last car would move, but it wouldn't be that fast and that much.

I believe its normal for the gas tank, if im at half a tank or lower and park on a steep hill my gauge will say empty. It has something to do with tank gauge.

Will that actually effect my gas, like if I'm in a hill and it says empty, will I be able to start my car?

Yes.... any fuel in front of the tank (like in the lines) will have pressure keeping it there so you wont have "dry starts"
