I'm wondering how much I will need to buy to refill the coolant since it is going to be drained while the manifold gasket is being replaced. Also, would be it be ok or recommended to replace dexcool with the green stuff?

18quarts of coolant.
If you're currently running dexcool... I would not switch to green - unless you wanted a gummed up engine and cooling system. Only way I'd switch is if you're replacing all of the components.

Your vehicle takes 20 quarts if equipped with air conditioning and 17.5 if not. Assuming no coolant system mods and he system including the heater core is completely dry.
