So I checked the fuel pressure while the truck was idling and it was at steady 50psi, but I wasn't able to check it while.stepping on the gas cause the stupid harbor freight pressure gauge was leaking, and on my previous note about the truck running fine in park, well now in park it spits and spudders if I step on it. Should I check the pressure while giving it gas?

fuel pressure seems on the low end. What's the fuel pressure with Key on Engine Off?
You might want to try and get fuel pressure with a load on the engine also, either run gauge up to windshield or brake torque it up a but, just don't hit anything...
These engines are very sensitive to low fuel pressure, especially if they have the original fuel injectors still.

If fuel pressure drops even lower it's most likely the pump, could be the regulator too though. Neither of them are quick and easy to change. Regulator is under the upper intake manifold attached to the side of the fuel injection unit.

Let us know what you find

According to the book fuel pressure with Key on Engine Off should be 60-66psi
running pressure should be around 55psi

Fuel pressure with key on, not running was 25, and at idle it was 52. The connection was leaking a bit, how bad will it affect the psi?

Yes leaking fitting can affect it but the fitting would have to be leaking a lot to cause that low fuel pressure. Did you have summertime turn on the key while you watched the pressure? The pressure will only be accurate while the pump is running, unless you start the engine the fuel pump only runs for 2 seconds
