Do you know if there is a hack for the 2021 Yukon Denali to get the video playing in the back to show on the front display?

No idea, don't know if they are even connected together

Why don’t you want to use iPads for the infotainment system?

Having dual iPads instead of the integrated RSE comes with a lot of pros and cons.

Cons:
-having to buy 2 iPads vs. rolling in the cost of RSE with the loan/lease (this could be a Pro for some)
-risk of theft
-visible charging cables
-can't mute/stop video from the front seats
-kids will inevitably want to play the audio through the ipad speakers instead of using headphones
-headphones = more wires...unless your kids have airpods/bluetooth headphones
-no auto OTA updates
-no Angry Birds

Pros:
-2 iPads are cheaper than the RSE package
-can be removed if you're worried about theft
-if connected to wifi, no need to have a Fire Stick/Roku/ChromeCast/etc.
-familiar interface the kids won't have to relearn
-Angry Birds

That's all i can think of right now...still not sure what option is better.
