I have a Samsung Galaxy Tab installed in my dash. Pretty easy actually.

I have a buddy that makes bezels for the ipad in the dash so im sure the mini can fit but the regular one is cool because it has such a huge screen

I did it. I have a pioneer head unit which gets a Bluetooth signal from the amp for audio. If you don't want to run a head unit, you can just use a preamp equalizer, preferably one with a line driver built in. That gives you volume control and tuning capability

Good job on the creativity! How long did the install take, did you relocate the center console, did you fabricate a bezel for fitment, and would you happen to have a write-up? This is something I would like to attempt since mine does not have any navigation. Plus, I would like to utilize the music in my iPad among other apps.

It took me a while to figure out how to mount the tab where it would stay in the dash opening without permanent modification. I used a sheet of abs plastic and cut it where it would bolt to the original stereo mount, I had to make two similar pieces to space it just right. Then i simply velcroed the tab to the abs and with a little alignment it actually looked like it belonged there. I mounted the head unit in the console in the storage where people usually mount a dvd player. I have some pics ill post in a little bit. As for speaker wiring, i rewired the whole vehicle since i am building a totally aftermarket system. I am running multiple amplifiers and ran a buttload of wire to each door and the A pillars
