You will need a large ac/dc converter. I use a 600 watt I believe for the ps3 and I have it installed in the second row captains chair hidden. The new gaming systems use allot of power and video quality is effected when you strain them.
They also get very hot so if you plan in hiding them be prepared for a fan setup. I have two small jet engine sounding fans 3000 rpm pushing and exhausting air from the console.
I definitely think it's over kill. Two much going on at once hard to concentrate or appreciate what is on any specific monitor. I once thought like you and I understand what your thinking but a truck sitting still with all those tv's and a truck moving down the road is two different stories. You will be surprised how fast your kids get bored or just not interested.
I put headrests in the bCk for my son in the third row 8 years old to play ps3. He told me he did not like the viewing angle for gaming so I just put in a flip down for him. Can you imagine? These kids now days have no idea.
The gaming issue I have is we don't really go anywhere long enough for my kids to save game data. They will always be way ahead of what they are playing on the home console.
The only real games that get played in the truck are sports and like street fighter, games that don't require saving data.
