Think we do indeed have an electrical issue here. Gauge was reading normal this morning.

I checked this about a bit last weekend. Physically didn't see anything wrong with the sensor or the connector. No corrosion anywhere. When I tried to unplug the sensor the locking tab broke off so it apparently gotten super brittle over time. The wires at the connector are bent over pretty tight so that could potentially be a problem. I didn't look into it any further since I need to replace the connector now. But it been working fine for the last couple weeks.

My 5.3 (01 Silverado) isn't coming up to temp either. Barely any heat in the cab. It's been a problem for a couple of years and is only an issue in the winter. Replaced the radiator last year due to end tank cracks. I, too, am leaning toward a stuck thermostat but will wait to see how your problem is resolved.

Be sure to use an OBD tool to verify the engine temp. This could be a thermostat problem -- incorrect temp or defective -- or the (aftermarket?) radiator's port that goes to the surge tank has too large of an orifice and the engine doesn't heat up. There are threads on here about that.

@iamdub solved that issue by using an old orifice from a tpms sensor. Said it was perfect.
